There are different reasons.
Some may have been raised christian and when they started to have doubts read the whole thing in order to understand themselves and the way they were raised better.
Then there are those affected by religious ignorance or by people trying to push religious laws, then it would only make sense to engage with them and build counter arguments on basis of the book they believe in.
Then there are people who are just interested in reading historic and religious documents.

Shouldn't the Bible bring people who doubt closer to faith after reading it? Why does the Bible mostly seem to encourage only people already born into christianity?
