Japan : Planning To Go In Early Feb

Me and my fella are going for 3 weeks in Feb, a little tour of the place. We're aiming to go both North & South, hitting the Blossom season as we go.

We're learning a chisai of Japanese, which has been fun.

So...places that anybody recommends to go? From nature's finest places to man-made things of beauty. Where do you recommend?
