Formal terms seem more common in Europe. I think the only time I’m ever called Sir might be at a formal restaurant or hotel - not that I go to either very often now.
These days there is so much informality that everyone assumes they can call me by my first name. I’m not a formal person but in a professional situation I thought it was simply polite to address someone as Mr or Ms to start with.
