I hate when they do that. I used to think it was poisonous or something when I was a kid. I'd try to throw them away and my mom would be like 'what are you doing!". Me, they are growing strings lol

They are. The potato (solanum tuberosum) is a member of the nightshade family (solanaceae) and contain the toxin solanine. Ordinarily the levels are negligible and pose no threat to human health but in green or sprouting tubers the levels are significantly higher and can be dangerous.
