Why do the parts of the marshmallow painted with baking soda toast faster than the rest of the marshmallow?

Baking soda is a base (as opposed to an acid). Bases speed up a process called the Maillard reaction.

The Maillard reaction is actually a series of chemical reactions between sugars and proteins that occur when food is heated.

@Magenta Science experiments you can eat are always the best. I don't think I ever did this particular demonstration, but there were certainly others...
