How do Flat-Earthers explain moon phases?

The moon moves in relation to the sun and different parts are illuminated as viewed from the earth.

My question is why the sun isn't always visible since every flat earth depiction I've seen shows the sun moving in a circle above the earth disk. So it should never set.
