In essence, it's inverse desires. Males desire health and fertilty. Younger women have these in spades. So, younger women have more value than older women: when speaking in this general dating context.

Women desire security, generally. Older men are more capable of providing this.

E.g. Men on average desire 22 year old women. Women on average desire 35 year old men. Career, experience, security, stability, etc. All things men gain as they age--usually. Whereas, female dating value decreases as their appearance [designator of health and fertility] declines, as they age
