Why do websites of tv channels want people to sign in with a tv provider?

I was able to watch the first 2 episodes of the series last week right after it aired with out signing in, now the third episode is locked and it wants me to select a provider.

Because of broadcasting rights. If you pay for cable then that company has given a part of that money to the network for you in payment for access. If you don't have a provider then they don't get money for your watching so they want to push you to get their streaming service or cable.
