What actually happens in the "talking stage" that makes it different from the dating stage?

I find it interesting that "talking stage" has almost become a relationship status now. You meet someone and they say, "my talking stage is this or that,"

I think it started when everyone got a cell phone and could spend more time talking and texting before meeting for dates. sure, you could talk on the phone before, but not a constant conversation.
