Cornish game hen dinner cheap!

I bought three of these about $5.00 each. Roasted the first one and It was stuffed. Had brown rice w/ chicken gravy. Roasted at 375 for about an hour. Skin brushed w/olive oil.
[image deleted]Stuffing: sautéed onion, celery, diced up pieces of whole grain bread, a bit of melted butter, thyme and Italian seasoning, a bit of s&p, 1 egg.

I bought a dozen of them a few years ago and my favorite way to cook was to cut them in half spatchcock style down the middle, lay them on a roasting pan & brush with olive oil, season with salt and pepper and roast. Oh boy they were really good that way. I’ve roasted them whole and also roasted them whole stuffed with dry fruit & nuts....spatchcock style is the best to me.

@CantExplain the skin was kind of crispy that way and they cooked quicker, but the flavor was so good too, very simple way to season them.

I LOVE Cornish hens better than chicken. I’ll need to roast some. It’s been years.
