Have you ever made your own cold cuts?

As in cooked some kind of meat or meat substitute which cuts cleaner when cold and then chilled and sliced it so you could have it as either a compact snack in itself or to make sandwiches out of. If so, do you prefer yours thick cut or thin cut or somewhere inbetween?

I have on several occasions and feel like I should really make a habit of it, it's waaayyy cheaper than buying them at the store and turns out way better. My preference for thinness varies too and it gives me a chance to get different slices out of the same meat.

(Usually the term cold cuts refers to things that are processed in some fashion like being coarsely chopped or ground, but I'm casting a slightly wider net with this and also accepting whole meat items that have simply been sliced for sandwich makin' or snackin' purposes. Because, really, that's just semantics.)
Oh yeah. It's the only way to enjoy lunch meat. I prefer mine thin but not so thin that it tears.
