I live in France and I always ask my meat cooked with no remaining red in it, even for roast or lamb. I can't stand the red in meat. Some cooks look at me strangely at first but they end up cooking my meat the way I prefer.
it doesn't taste as good as rare or medium rare steak. I don't eat partially cooked meat so for me, well-done is the best.
