That's an extremely difficult question. On the assumption that we'd actually be able to read and understand the book, having no other literary material available; the Encyclopedia Britannica.
It would most likely preserve the largest amount of humanity's accumulated knowledge, of any literary work I know. And that surely would be the aim of any intelligent person making this decision.
