Because 1. e in lemon is short and in demon is long and 2. different origins (lemon is from arabic word limun while demon comes from greek daimon)

@RemovedUsername553523 It's different because English isn't a phonetic language and there are a lot of loanwords from other languages (look at number 2.), that's why it is important if /e/ is long or short and to know which language it came from
Because English is a crazy language.

Read (past tense) and red makes no sense

Led and lead (metal) shouldn’t rhyme
