How can some people with smaller and less defined muscles be able to lift greater weights than some people with larger and more define muscles?

Tendon strength can have a lot do do with it. Rock climbers are a fantastic example of this.

You also find that a lot of bodybuilding muscle is 'show' muscle rather than strength muscle.

Form, repetition, stronger joints, tendons, ligaments. A lot of factors.

Because the main factor here wasn't about shape or size. But it is about weight.

The 'power' (energy, movement, thrust etc)of the human and their transference of 'energy within' to 'energy of thrust' in either an inward or upward direction.
