Yes , we used to hunt them so yes .
Wild duck and goose is dry so bag it and add some apple or bacon on it .
Both are dark meat .
And not much for drum sticks or wings on them .

no. i've only had duck at a chinese restaurant. never had goose

Have in addition too and had both at Christmas.
Goose, is..... Kind of an aquired taste for lack of better words. It can be good if seasoned and cooked just right, but is gamey as hell and almost fishy and muddy tasting if not. Duck is generally always delicious with the exceptions of a few sea duck species. Again it cooks differently than chicken or domestic turkey.
With waterfowl and wild game birds both it's generally safe to compair it to a bird of ALL dark meat.
