I Am American

Has anyone cooked duck or goose instead of turkey for Thanksgiving?

Yes , we used to hunt them so yes .
Wild duck and goose is dry so bag it and add some apple or bacon on it .
Both are dark meat .
And not much for drum sticks or wings on them .

@1GHOST Doves, grouse, and pheasants are delicious. I love upland fowling.

@MethDozer Yes I agree and fun !

@1GHOST There's nothing like the satisfaction of filling the locker with meat during deer season but upland and waterfowl hunting is the best. Dogs, friends, and beer.

Smoked snow goose

@MarineBob Ewwww... Those things are terrible. I'll eat Canada geese but snow geese, hell just leave them were they drop.

Have in addition too and had both at Christmas.

Goose, is..... Kind of an aquired taste for lack of better words. It can be good if seasoned and cooked just right, but is gamey as hell and almost fishy and muddy tasting if not. Duck is generally always delicious with the exceptions of a few sea duck species. Again it cooks differently than chicken or domestic turkey.

With waterfowl and wild game birds both it's generally safe to compair it to a bird of ALL dark meat.
