So... what is a great date? What is your hallmark for knowing you are on (or had) a great Date?... Of course, context matters. Is this your first date or a blind date.... or is it celebrating a special day... Valentine's with your wife?... Lol.
When you're both fully present (not just physically, but mentally and emotionally), and you both feel respected and appreciated, and hopefully desired by one another.
Either it's there or it isn't. You can't force it. And the more you try, the greater the "ick factor". I know, because I've tried in the past to force myself to feel something that I just didn't, and it always ended badly.

For me, I think it would be having great company and interesting conversation with someone I enjoy being with. There would be a great rapport between us. You can't beat being with someone who genuinely "gets" you.
However, since my last date was 27-years ago, I'm just guessing. Reality could be different.
