Why. Do emts keep talking to you when you ride in a ambulance

They don't want you to pass out, as that can be a big problem with some injuries….so they talk to you a lot & try to get you to respond if possible. It's actually part of their job.

Normally it is to keep you from thinking about what is really going, keep you from falling asleep and to keep evaluation your A/O - level of altered state.

they are just trying to get your phone number ;)
It helps them know the state of your consciousness, which is a guide to the seriousness of your medical condition and indicates what first aid actions they need to take. It may also give them other information about you which could help.
