Oven roasted Dijon salmon, roasted veggies, and salad.... doesn't that sound good?

Coincidentally I had roasted salmon on a bed of salad...watercress, rocket, spinach, beetroot, tomato, red cabbage, capers and onion just a few hours ago. Lovely, with a simple salad oil of olive oil and soy sauce.

uncooked salmon... onions and lemon with some parsley.

Zinfandel
