Home made chicken soup!

This is today’s project and it takes all day. Just finished up the cleaver work. Now the chicken gets soaked for 30 minutes and salted for an hour (known as “koshering”) before the water even gets boiled.

@Chernobylplaygrounds The best. I made it side by side with my grandmother dozens of times. One of my favorite things about making it now is how close it makes me feel to her.

Good food takes time. My Gumbo simmers for 3 hours. That's after I've browned and cut up the chicken, celery, bell pepper, and onion. Of course, it also makes enough to feed an army. BTW, it is even better the next day.

What does the koshering do?

@JaggedLittlePill From a traditional ritual perspective, it would remove any possible trace of blood remaining in an already kosher chicken. But in my experience it also concentrates the flavor and helps make the final soup more clear.

@JaggedLittlePill Of course the other reason to do it is because that’s how my grandmother and her mother did it. And that’s reason enough!
