Is it unethical to eat a chicken and egg sandwich?

Technically no, but it is unethical to buy one, or to motivate someone else to buy one through your consumption.
That depends on one's ethics.

For me, if the chicken lives a good quality free range life and is killed quickly and without stress, then there is nothing wrong with eating it. If the egg comes from a chook who lives a good quality free range life, that's fine too. The combination of chicken and egg makes no difference because neither is conscious.

However, I understand why vegans object to eating anything of animal origin.

On this thought, it reminded me of the Oyakodon, which is a Japanese dish which has both chicken and eggs. It's literally called "Parent and child" + "don"
