I've always been fascinated ...

.... it started with seeing the huge model train layouts at Christmas time in the old department stores.

But I imagine it can be a totally consuming hobby.

Oh, I suppose any hobby can be so consuming, but although it's not my own I do greatly admire and respect the skill and care expressed by finely-detailed model-railway (not just "train") layouts.

@ArishMell 50+ years ago I wandered into a toy shop someplace in Germany, Berlin I think. The details of the model trains was so impressive that I purchased a set for an 8 year nephew. I regret that I didn't buy 2, one for the nephew and one for me :)
