You should call the baker's hotline at King Arthur Baking Co. (in VT)...they are an employee-owned co. which makes great flours, etc., and have a baking hotline answer to the Butterball Turkey hotline.

Gluten free recipes are very iffy depending on what brand of gluten-free flour you use. I just have to try them out and keep them if they are good.
