Black Beans Rice: Vegan Version
Ingredients: 1 packet of packaged black beans, boiled long grain rice, onions chopped, garlic chopped, green chillies chopped, Mexican spice mix, salt (to taste), olive oil, black pepper crushed, red chilli flakes, tomato purée, carrots and French beans chopped, cumin seeds (half teaspoon)
Process: Unpack the black beans and wash it under cold running water. Heat up a pain and add olive oil. Add cumin seeds and let it splutter. Then add chopped onions and garlic and fry until light brown. Then add chopped green chillies, carrots and French beans. Fry all the vegetables, add salt, red chilli flakes and crushed black pepper. Also add tomato purée and fry altogether. Then add black beans and stir properly, add some water if needed. Then add boiled long grain rice and Mexican spice mix and stir everything together. Once it’s done, serve it hot.
