Easy Sausage and Egg Sunday Brunch Casserole


12 breakfast sausages, browned
Non Stick Cooking spray
12-14 eggs, blended on high in the blender
2 Tablespoons snipped chives
16 oz package, (or more), shredded cheddar cheese

Preheat oven to 350F.

Brown the sausages in a skillet and allow them to cool slightly, then cut them into chunks 1/2" thick.

Blend the eggs in the blender until well whipped. Spray a 13" x 9" pan with non stick cooking spray. Add the chopped sausages, then the eggs, and sprinkle generously with the chives.

Top the whole thing with the shredded cheddar cheese. It should be well covered with LOTS of cheese.

Bake for approximately 35 minutes. If the center shakes when you remove it, put it back in for 5 to 10 minutes more.

@OverTheHill It's pretty good! Some mornings you need protein, and I am on a wheat free diet...so this works for me! Next time I will use better sausages, I think. I bought store brand and they aren't as good as Jimmy Dean.

@4meAndyou Western omelets are great too. Protein and some vegetables.

@4meAndyou Really neat. I may try to make it soon. I like that you blend the eggs in a blender, which must result in a fluffy texture.
