Baked Creamed Spinach

Contains real parmesan cheese, but uses coconut milk and non-dairy cream cheese. Those who are lactose intolerant can sometimes eat AGED parmesan, and other AGED cheeses. No photo available.

3 large containers organic washed baby spinach leaves. Spun dry in salad spinner (Spin VERY dry).
Non-stick cooking spray
1 onion, chopped
1/3 cup butter
¾ container Kite non- dairy imitation cream cheese
1 cup unsweetened coconut milk
1 good shake ground nutmeg, (about 1/4 tsp)
1 light shake cayenne pepper, (less than 1/8 tsp)
½ tsp salt
1 ½ cups shredded parmesan cheese.

Preheat oven to 350 F. Spray a 13 x 9” glass casserole dish with non-stick cooking spray. Wash spinach, and spin dry in a salad spinner. Place in a bowl when dry.
Saute chopped onion in butter until tender and golden.
In a blender or Magic Bullet, blend the sauteed onions, Kite non dairy cream cheese, coconut milk, nutmeg, cayenne pepper, and salt for about 3 minutes until smooth.
Pour over the spinach and toss in the bowl as you would a salad until all the leaves are coated.
Pour the creamy spinach into the 13 x 9 “ glass casserole dish, and sprinkle liberally with parmesan cheese.

Bake for 30 minutes, and then allow the creamed spinach to rest. It will thicken up.
Serves 4 to 6 people.

I think I would halve that recipe and try it. I like the creamed spinach that some restaurants serve.

@Karmalives You are welcome! This was really good! I had baked creamed spinach at a fancy restaurant in Boston, and I still remember that they used nutmeg. It was great...and this was my attempt to recapture it.
