Sort of Like Chicken Cordon Bleu Casserole, Non Dairy [I Like To Share Recipes]

I was not going to roll up and stuff and fry little chicken rolls. Too tired, really.

This casserole contained many of the same elements, with lots of substitutions.

Spray a large non-stick roasting pan with non-stick spray. You do need the double non-stick.
In order, spread the following elements across the bottom of the pan, trying to cover the entire bottom with chicken and ham:

2 oz garlic and butter oil, homemade, spread over the bottom of a large non stick roasting pan.
8 thin sliced chicken cutlets
8 or more thin ham slices cut from a spiral ham
1 and 1/3 blocks of Daiya Havarti Cheese sliced thin. (If you can eat real cheese, Cordon Bleu calls for swiss cheese).
1 (15 oz) can of corn drained
8 oz bag frozen chopped broccoli
Preheat oven to 325 F.
1 8 oz box chicken stuffing mix, prepared according to package directions and dotted/spooned over the top of the broccoli.

Place 1/2 stick of butter in a 4 cup pyrex cup, and microwave for one minute. Mix into the melted butter 2/3 of an 8 oz box of plain Panko bread crumbs. Stir with a fork, and then dot/spoon the panko crumbs over every part of the casserole top that is NOT covered by the stuffing mix.

Bake for 55 minutes. Casserole will be golden brown on top when it is removed from the oven.

Makes 8 very generous servings.
