Bacon, Green Onion and Pepperjack "cheese" Frittata, Dairy Free [I Like To Share Recipes]

1 (7 oz) bag of Daiya Pepper Jack "cheese" shreds.
12 oz of green onions, washed and chopped.
6 slices of bacon, cooked and chopped.
12 medium eggs, or 10 large eggs, whipped in your blender.
Non Stick cooking spray

Preheat oven to 350F.

Spray a 12" glass pie dish with non-stick cooking spray. To the dish, add the onion, bacon, and whipped eggs. Top with pepper jack "cheese" shreds.

Cover the pie dish with aluminum foil. Bake 40 minutes. Remove foil, and bake an additional 10 minutes. Cut into wedges to serve.

Serve with a side of sourdough toast.

Serves 6. (Can be reheated gently...no more than a minute in the microwave, test, no more than an additional 20 seconds.)

@ShadowWorker New photo above. It had a amazing texture to it on top. The cheese and the egg merged just under the surface and I can't quite describe it...sort of airy and cheesy at the same time.
