4meAndyou's Dairy Free Barbecue Pork, "Cheese" and Rice Frittata

Because dairy free cheese substitute doesn't melt like other cheese, it can never be put on top of a frittata or any other casserole. Shredded Chicken can be used in this recipe instead of pork.

1 cup uncooked long grain white rice
1 heaping tablespoon chicken flavor Better than Bouillon paste
1 Tablespoon garlic powder
4-6 eggs
1 cup creamy coconut milk
1 small bunch of green onions,(scallions), about 5, sliced.
1/4 to 1/2 small green bell pepper, diced fine
1 package Go Veggie non-dairy American cheese slices, use about 9 slices
2 cups pulled pork (shredded chicken can be substituted for pork).
3/4 cup Sweet Baby Ray's BBQ sauce
15-20 roasted tomato flavor Triscuits, crushed.
1 tsp McCormick Cajun seasoning
4 tablespoons olive oil based margarine, or 4 Tablespoons olive oil, plain.


Prepare 1 cup of long grained uncooked white rice according to directions, but add 1 Tablespoon chicken flavored Better Than Bouillon Paste and 1 Tablespoon garlic powder and 1 Tablespoon chopped parsley to the cook water. Cool rice. It must not be steaming hot when you pour the eggs over it. You can even make the rice the night before and refrigerate it. When the rice has cooled:

Spray an 8" x 8" casserole dish with non-stick cooking spray and preheat oven to 350 F.

Put the cooled and cooked rice in the bottom of the casserole dish.

In a medium sized bowl, beat with a fork 4 to 6 eggs together with about 1 cup of creamy coconut milk. Pour milk and eggs over the rice.

Chop 1 small bunch of green onions, and finely chop 1/4 to 1/2 small green bell pepper.
Sprinkle the chopped raw vegetables on top of the eggs and rice.

Take one package of Go Veggie American cheese slices or other similar non dairy cheese, and lay slices on top of the veggies, eggs and rice until they are completely covered.

Use 2 cups homemade pulled pork if you have it, and mix it with 2/3 cup Sweet Baby Ray's Barbecue sauce. If you don't have homemade pulled pork, it is okay to substitute pulled pork from the ready meals section of the deli counter, but do not add more BBQ sauce if it is already in a sauce.

Top the cheese with the pulled pork and sauce mixture. It is important that it be fairly saucy, because that helps the "cheese" to appear to be melted.

Bake for 45 minutes, uncovered. While the frittata is baking, crush about 15-20 Triscuits with roasted tomato flavor mixed with 1 tsp Cajun Seasoning inside a zip lock baggie, with the smooth side of your kitchen hammer or with the bottom of a glass.

Melt 4 tablespoons olive oil based non-dairy margarine in a cup in the microwave, and mix the melted margarine with the Triscuit crumbs thoroughly. Plain olive oil can be substituted for the olive oil margarine if necessary.

When the frittata is done, remove it from the oven and top the pulled pork with the oiled crumbs. Return to the oven for about 5 to 10 minutes, just to crisp the crumbs.

Cut into 4 sections. Squirt BBQ sauce in a circle on the plate, then place the square of frittata inside that circle, and top with a sprig of green onion sliced in half the long way, if you want to make it pretty.

Serves 4.
