Peppermint Patty Mousse-ish

A month or so ago I bought York Peppermint Patty dessert mix. It was very good but carb-dense.

I decided to try to DIY a lighter recipe.

1 box of 1.4 oz sugar-free Jello Instant Chocolate Pudding Mix
1 1/2 c cold fat free milk (1/2 c less than called for on pudding box)
3 teaspoons cocoa
1/4 to 1/2 teaspoon peppermint extract

Whisk by hand or mixer for 2 min and refrigerate.

If you choose to, it would work very well in those little graham cracker or oreo cookies dessert shells with a dollop of whipped cream, but of course that adds carbs again.

I find it delightful as is!
