Kind of for the same reason you suddenly feel okay once at the doctor, or you car quits acting up at the mechanic shop, well ya know.

I swear a fly has more intelligence or instincts than we give them credit for. When you are after them they disappear because they usually land on something dark which they blend into. If you corner them in like the bathroom they will start diving for the cracks along the edge of the door.
