"Confetti" Chicken Salad


You need a food processor to make this recipe. Recipe should be served the following day after flavors blend.

2 boneless cooked chicken breasts, and well seasoned UNDER the skin during cooking with the following spices: Garlic Powder, Onion Powder, Salt, Pepper and Paprika. Bake for 45 minutes at 375F.

1 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1 bunch scallions, (green onions), cleaned and sliced
Iceberg lettuce hearts
1/2 tsp salt
1/2 tsp ground black pepper
1/2 cup sweet pickle juice
1 and 1/2 cups Miracle Whip or Generic Whipped salad dressing.

After the chicken has cooked, cool in refrigerator until easy to handle. Remove the skin from the boneless chicken breasts, and discard. ( You should have thickly spiced boneless skinless chicken breasts).

Cut the chicken breasts into rather large chunks, and, with the chopping blade in your food processor, process until the chicken is finely ground.

In a blender, combine the Miracle Whip or generic Whipped Salad dressing, the salt, pepper, and sweet pickle juice. Blend until well combined. You could whip the salad dressing ingredients together by hand.

Chop the bell peppers, and slice the green onions.

In a large plastic container with a lid, combine all ingredients except lettuce, and mix very thoroughly.

Refrigerate overnight.

To serve, place a washed and dried cup-shaped chunk of iceberg lettuce in a bowl, (should be nice and crunchy), and top with a scoop, (1/2 cup or more) , of confetti chicken salad.

I tried this as a sandwich with wheat bread, and the flavors and textures don't work, but it's delicious with ice berg lettuce!!!

This sounds delicious!! I’ve done something similar with tuna n chicken. But never used Miracle Whip. I’m going to try this …thanks for sharing! 💕🤗
