Can you crack an egg open with one hand?

Yes I can, but we started getting farm fresh eggs and their shells are different, so I'm invariably fishing out shell fragments. So, I need a technique adjustment which is tough, because I've been doing it this way for a long time. The store mass produced eggs seem to be tougher and crack cleaner using a one hand technique.

Yes, I can but it does take practice. And a gentle hand.

No I cannot do that. I'm too rough I guess.
