They start off green and are very hard. You cannot eat them without cooking it. They are not sweet when green. They make good chips at that stage.
Once you let them sit on the counter few days the outside turns blackish spotty and the sugar comes out.
You can boil it in soups or fry them sweet and crispy. Like sweet potato fries
