How Do You Know When It's Time to Turn the Pancakes Over?

If I’m gonna eat a pancake that the chef made it needs to not be contaminated. That would be illegal. If I’m not eating the pancake then that’s not for me to follow closely because I don’t eat the pancakes. But I have the choice to eat the pancakes that chef makes. Should I ever choose to do so I want to make sure the chef is following food laws. I don’t need to follow closely. Someone who eats pancakes will and if there’s something wrong I’ll support action.
