If you cook at home do you use recipes, mixes, or use creativity & make your own dishes with what you have?

I cook at home all the time. I have a large notebook where I have my favorite recipes. I have found it is much better to at least start with a recipe but feel free to modify it. If you fly without recipes, you will make a lot of mistakes and have food that doesnt taste that good. Consider that if you use recipes from famous chefs, they have a lot more experience than you do. I have cookbooks from Julia Child (of course), Emeril. Jacques Pepin, and many others. Rachel Ray taught me how to make gravy. Emeril taught me how to make a roux. I now use Julia's recipe for roasting a chicken because it consistantly turns out better. I do have some recipes that I have compiled over the years, like chili, lasagna,mac & cheese, that are combinations of several recipes and changes that I think improves. With my recipes, I dont have to reinvent the wheel every time I cook.

@nakedguy I need to keep a notebook for when I make something & it’s really good to remember what I did. I mostly use what I have, a lot of alternative flours because I’m not eating wheat.

@cherokeepatti I find it valuable to have these recipes, because when I make something and eat it, I frequently say, the next time i make this I am going to.... This way I don't have to try and remember.
I call my cooking "TEATS" (Trial Error At The Stove) Cooking

is an art, baking is a science, but I tend to take liberties and see what I get. Most of the time simply by intuition, what I make turns out OK..
Sounds great! I also do it in an iron skillet. Haven't done the beef or cheese, but I may very well next go around.@cherokeepatti

@cherokeepatti try making up a batch of chili, pour into a large shallow baking pan. Mix up cornbread as if you were making it in a skillet. Drizzle cornbread in spoonfuls over the chili until it completely covers the top. Bake in hot oven for 30min or so. Pretty darn good.

I have recipes and use them as a starting point. Once you learn techniques in the kitchen you can pretty much do away with having to follow a recipe. Love cooking!

@PrivatePeeks that’s what I’ve been doing lately baking gluten-free muffins and other foods...the banana muffins I made taste better than what I’ve found in recipes.

People think my meals are world class. I can eyeball the measurements.
Much of my cooking stems from excessive beer drinking which makes me hungry, and I probably cook better "hammered" than sober.@PrivatePeeks

So many of my dinners growing up were creations my dad came up with because he really did have to be creative that often. Just the other day my youngest asked for one of his dishes for dinner so his creativity in the kitchen has stuck with me. All three get their turn though depending on how much time I have allotted to me. The dinners I really love to make take upwards of two hours to make so I tend to space those out.

Recipes for sure, for me at least. There are many dishes I know by heart, but I like some general rules when I'm putting food together - probably why I enjoy baking bread!

The first time I make something I stick strictly to the recipe. Then if I think the dish could be improved by tweaking the recipe, I tweak the recipe if I make it again.

I cook from scratch. I have several dishes I have developed over the years; my cooking is more a matter of technique than recipe(s) [i]per se[/i]. I just "wing it."

I do all the cooking and each dish is a variant of something you can find online. i take a receipe, modify for my taste, and goe from there. I also experiment.

Make my own dishes have never used a recipe even at college I was always being had a go at from not following recipes by tutors .I learnt by experimentation .
