I prefer a two-stage cooking where you fry the chicken until golden brown and then finish in a 350 oven for 10 minutes. Straight frying gets the chicken too dark.
Otherwise, this recipe is great. If you have to cook it tonight, then just brine for a half hour or soak in buttermilk. It'll still make a difference.

@Tryingtofindabalance Serious eats is REALLY good. That said, I can 100% swear by this specific recipe for regular fried chicken. Combine that with the nashville hot stuff from the above recipe and you're guaranteed success.
