First Set of Cookies Are Done
Christmas Cookies
2 cups softened butter
1 cup dark brown sugar
1/3 cup cane sugar
1 tsp almond extract
3 tsp ground cardamom
3 tsp ground nutmeg
4 cups all purpose flour
Lingonberry or jam filling or candied cherries.
Directions:
Preheat oven to 350o F
•In a medium bowl, cream butter and sugar together until smooth and slightly fluffy.
•Mix in almond extract, cardamom and nutmeg
•Mix in flour and beat for 2 full minutes
Using a small ice cream scoop (or roll into small same sized balls – about 1 inch) and place on ungreased cookie sheets at least 4 inches apart (they will spread).
Use a ½ teaspoon measure to make a small indentation in each cookie ball and fill with lingonberry or other jam or top with a candied cherry.
Bake for 14 to 18 minutes or until lightly browned. LET COOL FOR 2 MINUTES ON COOKIE SHEET.
Remove cookies to cooling rack.
