My favorite way to cook chicken is to brine it, marinate it, and grill it. I sear the chicken on a very hot grill, and then I gradually pour the marinade over it as it cooks, turning it frequently.

I take four to six chicken breast halves, pound them flat, and brine them for two hours.

I put finely chopped garlic, poultry seasoning, tarragon, curry powder, paprika, and lemon pepper in a heavy duty one gallon Ziplock bag, with a drizzle of sesame oil and some olive oil. I suck the air out of the bag, and I crush the garlic and herbs with a rolling pin. I open up the bag and add a splash of white wine, several tablespoons of applesauce, some frozen apple juice concentrate dissolved in a half cup of chicken broth, a teaspoon of liquid smoke, and several sloshes of Worcestershire sauce. I add the chicken, and let it marinate for two hours. I then grill the chicken. I gradually pour the marinade over the chicken, turning it frequently.
