I used to live in Mass and when I moved to NV I truly miss a good slice of pizza . For all the pizza places out here there is nothing like the pizza out in the northeast these western people just do not know pizza.
There used to be a place in LA that said they used "genuine imported New York City tap water" to make their pizza. The New York tap water is filtered by passing through the basalt of the Catskill Mountains while LA tap water comes through the granite of the San Gabriels, and it makes a difference.
It's the water. You need water with very low mineral content to make good dough. I was in Las Vegas a couple of years ago, and there was an ad on TV for a pizza shop that imported its dough from Boston. I didn't believe it, but it was a good advertisement.
