As for the argument for and against open flame propane cooking. Charcoal burns at a higher temperature enabling a faster sear and obviously there is smoke involved. Gas is much more convenient and in ways faster. They both have a place on my deck and in my cooking techniques but when I'm reverse searing a 90 dollar waygu ribeye or direct charing a skirt steak for fajitas I just prefer natural chunk charcoal.
Best part about grilling is how personal it is and however you do it is right for you. I should apologize for suggesting my way is the best. It's the best for me.
