Just cut of the mouldy but instead of wasting the cheese

EmeraldOdinelle is right. Just cut out the moldy spots. The rest of the cheese is good. Mold is what gives blue cheese and many other soft cheeses their flavor. On firm cheeses, just scrape off white mold with a knife. It is harmless and doesn't taste bad. Blue and green molds should be cut away mainly because they usually taste bad. You rarely see them, but red, orange, and black molds (smuts) could be potentially dangerous but even with them, just carefully cut them away. Just be sure you remove all of them.
