Ok so there is this Indian restaurant not far from me. I love the masala chicken. I looked up the recipe online and it was quite easy to make. Even though I added too much salt and honey it turned out pretty good. The recipe called for marina. It suggested a store bought brand. I make mine from scratch. You need a large pot to stew the tomatoes. Let them cool a bit then peel and core them. Then add oregano salt pepper tomato paste and sugar. The sugar sweetens the sauce and reduces the acidity of the tomatoes. Let simmer stirring occasionally. Once the sauce has cooked down you add the masala seasoning heavy cream and honey. You should be able to find the masala seasoning at your local grocery. Hope you enjoy.
