I Like to Cook

It's a beautiful November evening. Today was filled with sunshine and the colors of the leaves contrasted against a clear blue sky. Since we just turned our clocks back, it was dark by 5:30. The fall weather and early darkness makes me want to make soup, stew, pot roast, pie, bread....mmmmm. Tonight I decided to try a vegetable stew to go along with the pumpkin cornbread (from a mix) that I found at my favorite store, Trader Joes. The stew had chopped onions, multi colored carrots, celery, parsnips, and spinach, with organic vegetable broth. I added a little salt, pepper, and margarine to it after I put it in bowls. I used some of the cornbread in the stew to serve the same type of effect as crackers but with a much richer flavor, and the cornmeal texture was just the right addition to my bowl of comfort. Now....if only my LOVE was here to share it with me. That would be perfect :)

Compliments on cooking from scratch: what this nation needs. (I jut assume you are from the US). I read today that between the ages of 20 and 40, one man in six and one woman in seven eat pizza every single day none of them made at home. Your stew sounds just right,Hint: butter is no longer considered unhealthy by most enlightened nutritionists, especially compared to margarine which usually contains all sorts of factory-processed chemicals. Use unsalted butter and add salt separately (and remember, the salt you add when cooking is much less than the daily 3 grams you are allowed. Excessive salt is absorbed from factory-processed foods such as broth, soups, sauces, snacks, cheese and lunch meats). Butter tastes better and is actually healthier than marg.

I like that tip!!! And I will use it! :)) And.....I try with everything in me as a single mom to give me and my daughter a diet that is filled with variety and color...I try. Some weeks are better than others, but I am happiest when I'm cooking like this....not just because my body feels better but because I get to enjoy the process of making something! :) WITH LOVE :)

hahaha....well, I wouldn't say that, but I appreciate the ego boost! :) I just love being creative with food...variety is the spice of life!
