Easy. Not get attacked in the first place. Attacks are VERY rare and if you have the basic knowledge of being around them safely they don't pose much of a threat at all. I've seen a lot of them and it's always a thrill.
But if you WEREN'T prepared the standard rule of thumb is never run and if an attack ensues, you fight back against a black bear and "play dead" (with your pack on and laying on your stomach) with a brown bear. With a polar bear...you're toast if it decides you're a meal.

I'd stand my ground, wave my arms, and yell loudly. They tend to veer away at the last second.
