There are plenty of options. Last night I made Cajun chicken salad. The Cajun seasoning is no sugar and low carb on non depending on the brand. If you have a n oven. You could make zucchini lasagna. I always add meat to the sauce. Just look for a sauce low in sugar.

[@1089099,Brickbybrick] i'm a fan of three bean salad lol. or chickpea and fennel salad (with optional artichoke hearts) if they can tolerate beans. beans are like a moderate carb item but three bean salad takes a little sugar. eta- googled it, beans are said to be great for diabetics

What you need is a meal that has no sugar and is low in cards.

Sweet potato is a good substitute for potato.
Beans are good too.

How about some pan-fried fish on a bed of pesto cannelli beans?

It's funny, yet I never use any sugar or products that have sugar in any of my cooking. Not even fruits except hot cereals.

You might want to stay away from things like beets. Few know this yet sugar is often made from beets. Not just sugar cane.

Don't cook. Buy something from a sugar free bakery and serve it with tea or coffee.

Since you are celebrating with them, I'm assuming it is a morning-after celebration.. And breakfast in bed is in order..
So here is one of my GF's (who is borderline diabetic) fav's that I cook for her (and I am NO COOK):


Apple-Cinnamon Breakfast Barley

prep: 5 mins
cook: 40 mins
total: less than 1 hour
Servings: 3
1 cup uncooked pearled barley
录 cup chopped walnuts
2 teaspoons brown sugar
1 teaspoon ground cinnamon
录 teaspoon nutmeg
1 cup 1% low fat milk
6 tablespoons chopped fresh apples

Step 1 Bring 3 cups water to a boil in a medium saucepan over high heat. Add barley, bring water to a boil, and then reduce heat to low. Cover and cook 35 to 40 minutes or until most of liquid is absorbed.
Step 2 Stir in walnuts, brown sugar, cinnamon, and nutmeg. Add 1/2 cup milk, stirring until mixture is creamy, barley is tender and most of the liquid is absorbed. Add an additional 1/2 cup milk, if necessary, to reach desired consistency.
Step 3 Divide barley evenly among 3 bowls. Top each bowl with apples.
