I was amazed that Americans and Canadians don't really eat lamb to any significant extent, despite sheep/goat being the most commonly eaten meat in the world.

bones are lame and kebabs aren't worth the effort so that leaves steak which is tough and you should be sitting to eat. How are you going to party and mingle carrying a steak and utensils around
