Can one be "embarrassed" about compliments?

Like when people don't say "thank you" but say something like "no, I'm not" in a shy/embarrassed way?

Edit: Once when I bought salad and she was sitting at the cash register, she said "salad is a good choice for starters" (we talked about my eating habits before) what about that?
