What is a discreet compliment for a man to make a woman to let her know he looks after her when she doesn't notice?

I'm not sure there is a discreet compliment way to say that, unless you two have a connection where things can be said without being spoken, and both read each other the right way.

But you could say some form of "I've got your back" or confidently say "You know I got your back"

@scooogy Looking at someone means you physically see them.

Looking after someone implies you're protecting them from something.
