You can turn off the automatic updating.My phone tells me when updates are available and I update if I wish.But also remember that updates can be security patches that your phone needs.

Easy? Not to my knowledge. Usually you have to root it and install the previous rom using TWRP

I wish I could downgrade a lot of things. Most "updates" these days only make stuff worse.
